Macaroni and Cheese
Traditional Italian Family Favourite Mac and Cheese!

- 20 g Butter
- 100 g Cheese
- 2 Tbsp Flour
- 2 cups Milk
- 4 Rashers Streaky Bacon, Diced optional
- Salt and Pepper, to taste
- 250 g Pasta
- 2 Tbsp Garlic infused olive oil
Cook pasta as per packet instructions, drain.
Put garlic infused oil into a hot pan, add bacon. cook until golden. Add to pasta.
In a small saucepan add butter. once melted, add flour and mix until combined into a roux. Slowly add milk making sure well combined each time. Bring to boil then simmer until thickened slightly, then take off the heat.
Add cheese, salt and pepper to the milk mixture stirring until all all melted. pour over the pasta and combine well.

Dairy Free - I replaced the milk for soy milk (not made from soybean) and used dairy free cheddar cheese
Fodmap Friendly - I suggest lactose free milk alternative as well as gluten free pasta (normal pasta is fodmap at 1/2 cup after cooking). Cheese is naturally low in lactose so there is no substitute needed.
Vegan - The same as dairy free and leave out the bacon
Celiac - Use gluten free pasta

- Try adding vegetables chopped finely to add more nutrition
- This can be made in big batches and frozen for later for up to 2 months!
