Macaroni and Cheese

Traditional Italian Family Favourite Mac and Cheese!

  • 20 g Butter
  • 100 g Cheese
  • 2 Tbsp Flour
  • 2 cups Milk
  • 4 Rashers Streaky Bacon, Diced optional
  • Salt and Pepper, to taste
  • 250 g Pasta
  • 2 Tbsp Garlic infused olive oil


  • Cook pasta as per packet instructions, drain.
  • Put garlic infused oil into a hot pan, add bacon. cook until golden. Add to pasta.
  • In a small saucepan add butter. once melted, add flour and mix until combined into a roux. Slowly add milk making sure well combined each time. Bring to boil then simmer until thickened slightly, then take off the heat.
  • Add cheese, salt and pepper to the milk mixture stirring until all all melted. pour over the pasta and combine well.


  • Try adding vegetables chopped finely to add more nutrition
  • This can be made in big batches and frozen for later for up to 2 months!

Dairy Free - I replaced the milk for soy milk (not made from soybean) and used dairy free cheddar cheese
Fodmap Friendly - I suggest lactose free milk alternative as well as gluten free pasta (normal pasta is fodmap at 1/2 cup after cooking). Cheese is naturally low in lactose so there is no substitute needed.
Vegan - The same as dairy free and leave out the bacon
Celiac - Use gluten free pasta
Keto - Unfortunately the shops do not sell a keto alternative for pasta here. But here is a recipe made especially for keto!
