Lunchbox friendly and great for a quick lunch!
A delicious addition to the family whether they are for the lunchbox or just lunch!
- Muffin Tin
- 1/2 Small Zucchini grated (55g)
- 1 Medium Carrot (70g)
- 1/4 cup Cheddar Cheese Grated (60g)
- 4 Eggs Free-Range (200g)
- 2 tbsp Milk (40mls)
- 1/2 tsp Italian Herbs Dried (0.5g)
- 2 tbsp Tomato Passata (40ml)
- Butter to grease
- Preheat oven 200C, grease muffin tin with butter.
- Mix all ingredients (except passata) in a bowl until well combined.
- Spoon into muffin holes and bake 15-20mins or until firm on top.
- Serve with passata for dipping.
